2 ½ to 3 pounds boneless country style pork ribs

2 tablespoons olive oil

Salt and pepper, to taste
Dry Rub Seasoning

1 tablespoon brown sugar

1 tablespoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder
-
1 teaspoon ground mustard
-
½ teaspoon cayenne pepper (optional for heat)

1 teaspoon salt

½ teaspoon black pepper
For Braising Sauce (Optional But Recommended)

¾ cup BBQ sauce (your favorite brand or homemade)

½ cup apple cider vinegar
-
1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

2 cloves garlic, minced
Instructions
Step 1: Season the Ribs

Pat ribs dry with paper towels.

Rub olive oil all over the meat.

Combine all dry rub ingredients in a bowl.

Coat ribs generously with the rub. Let sit for 15–20 minutes at room temp.
Step 2: Preheat and Prepare

Preheat oven to 300°F (150°C).

Place ribs in a baking dish or roasting pan.

Pour in braising sauce mixture if using, or add a splash of broth or apple juice for moisture.

Cover tightly with foil.
Step 3: Bake Low and Slow

Bake covered for 2 to 2 ½ hours, until very tender.

Remove foil, baste with more BBQ sauce, and return to oven uncovered for 15–20 minutes at 425°F to caramelize.
Step 4: Rest and Serve

Let ribs rest 10 minutes before slicing or shredding.

Serve with extra sauce on the side.
