Ingredients
For the Steak Bites

1 1/2 pounds sirloin steak, cut into 1-inch cubes

1 tablespoon olive oil

1 tablespoon butter (for searing)

Salt and pepper, to taste

1 teaspoon smoked paprika

1/2 teaspoon garlic powder (optional)
For the Potatoes

1 1/2 pounds baby potatoes, halved or quartered

2 tablespoons olive oil
-
1 teaspoon salt
-
1/2 teaspoon black pepper

1/2 teaspoon dried rosemary or thyme (optional)
Garlic Butter Sauce

3 tablespoons unsalted butter
-
4 garlic cloves, minced
-
1 tablespoon chopped fresh parsley
-
1/2 teaspoon crushed red pepper flakes (optional)

Juice of 1/2 lemon (for a bit of brightness)
Instructions
Cut steak into 1-inch cubes. Pat dry with paper towels.
Season with salt, pepper, paprika, and garlic powder.
Set aside to come to room temperature while you cook the potatoes.
Heat 2 tablespoons olive oil in a large skillet over medium-high heat.
Add potatoes cut-side down in a single layer.
Cook for 12–15 minutes, flipping occasionally, until golden and fork-tender.
Season with salt, pepper, and herbs. Remove from skillet and keep warm.
Add 1 tablespoon olive oil and 1 tablespoon butter to the same skillet.
Add steak bites in a single layer (don’t overcrowd).
Sear for 1–2 minutes per side until browned. Work in batches if needed.
Remove steak bites and set aside.
Lower heat to medium.
Add 3 tablespoons butter to the pan.
Stir in minced garlic and red pepper flakes. Sauté for 30 seconds until fragrant.
Add lemon juice and parsley. Stir to combine.
Return steak and potatoes to the skillet.
Toss everything in the garlic butter until coated.
Serve hot with extra parsley or a sprinkle of Parmesan if desired.
