Ingredients

12–15 Medjool dates, pitted

½ cup peanut butter (or any nut butter of your choice)

1 cup dark or milk chocolate chips (or chocolate melting wafers)

1 teaspoon coconut oil (optional, for smooth melting chocolate)

Pinch of sea salt (optional, for garnish)
Instructions
Step 1: Prepare the dates

Cut each date in half lengthwise and remove the pit.

If the dates are a bit dry, you can soak them in warm water for 10 minutes, then pat them dry with a paper towel.
Step 2: Fill the dates with peanut butter

Scoop about a teaspoon of peanut butter and fill the center of each date. Press the sides of the date gently to enclose the peanut butter inside.

Continue filling all of the dates with peanut butter until they’re all ready.
Step 3: Melt the chocolate

In a heatproof bowl, melt the chocolate chips using your preferred method:

Microwave: Heat the chocolate chips in 20-30 second intervals, stirring between each, until completely melted and smooth.

Stovetop: Place the chocolate chips in a bowl over a pot of simmering water (double boiler method), stirring constantly until melted.

If you want a smoother chocolate coating, add 1 teaspoon of coconut oil to the chocolate as it melts. This will help the chocolate coat the dates more evenly.
Step 4: Coat the dates in chocolate

Once the chocolate is fully melted, dip each date into the chocolate, using a fork to lift it out and allowing any excess chocolate to drip off.

Place the chocolate-covered date on a parchment-lined tray or baking sheet.
Step 5: Chill and set

Once all the dates are coated, place the tray in the refrigerator for at least 30 minutes to let the chocolate set and harden.

If you want to make them extra fancy, you can sprinkle a pinch of sea salt over the top of the chocolate before it hardens.
Step 6: Serve and enjoy

Once the chocolate has set, your chocolate covered dates with peanut butter are ready to enjoy! Serve them chilled or at room temperature.
