- ½ teaspoon salt
- ½ teaspoon black pepper
For the Classic Toppings:
- 1 cup shredded cheddar cheese
- 4 slices crispy bacon (crumbled)
- ½ cup sour cream or Greek yogurt
- ¼ cup green onions (sliced)
Optional Toppings:
- Guacamole or diced avocado
- Black beans and corn
- Pulled chicken or pork
- Jalapeño slices for heat
3. Step-by-Step Preparation
Preparing the Sweet Potatoes:
- Bake the Potatoes:
- Preheat the oven to 400°F (200°C).
- Wash and dry the sweet potatoes, then prick them with a fork.
- Bake on a baking sheet for 45-50 minutes or until tender. Allow them to cool slightly.
- Cut and Scoop:
- Slice each sweet potato in half lengthwise.
- Carefully scoop out most of the flesh, leaving a thin layer to support the skin. Save the scooped flesh for another use (like mashed sweet potatoes).
- Season the Skins:
- Brush the insides with olive oil and sprinkle with salt and pepper.
- Place them back on the baking sheet, cut side up.
- Crisp the Skins:
- Bake the skins at 400°F (200°C) for 10-15 minutes, or until they’re golden and slightly crispy.
Adding the Toppings:
- Cheese and Bacon:
- Sprinkle shredded cheddar cheese and crumbled bacon evenly over the skins.
- Return to the oven for 5-7 minutes, or until the cheese is melted and bubbly.
- Finishing Touches:
- Top with a dollop of sour cream or Greek yogurt.
- Garnish with green onions and any additional toppings of your choice.
4. Variations and Customizations
- Tex-Mex Style: Add black beans, corn, and a drizzle of chipotle sauce for a bold, smoky flavor.
- Vegan-Friendly: Use plant-based cheese and sour cream, and load up with veggies like sautéed mushrooms or spinach.
- BBQ Twist: Top with pulled pork or chicken and a drizzle of barbecue sauce.
- Breakfast Option: Add scrambled eggs, crumbled sausage, and a sprinkle of chives.
